Cucumber Agua Fresca
This refreshing drink is perfect for those warmer days coming up. I came up with this recipe on a whim, because I had used 1/3 of a cucumber for tzatziki sauce and then didn’t need the rest. Inspired by the agua frescas all over Mexico, this one has a fun twist, using lemongrass for an unexpected zing. I hope you like it!
You will need:
2 cucumber cut into chunks
1-2 limes, juiced
1 Tbsp lemongrass (use ginger if you don’t have lemongrass)
1/4 cup honey (or maple syrup)
10 mint leaves
2 + 2 cups of water
ice for serving
Instructions:
In a high speed blender, blend cucumber, lime, basil, lemongrass, honey / maple syrup and 2 cups of water until smooth-ish.
Strain liquid into a pitcher using a fine mesh strainer. Discard pulp.
Mix the additional 2 cups of water. Store in fridge and serve over ice. Enjoy!!
